Easy Peasy!
Ingredients:
- 1 lb lean ground beef
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 15 oz black beans, drained and rinsed
- 15 oz kidney beans, drained and rinsed
- 3 cups of chicken broth (if you want it to be more soup-y, do 4 cups instead)
- 15 oz diced tomatoes (keep the juice)
- 4 oz can chopped green chiles
- 1 1/4 cup frozen corn kernels
- 2 1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
Directions:
- Pour olive oil in a sauté pan. Add ground beef and diced onions. Brown the beef and cook until the onions are soft.
- Add this mixture to the crockpot. Add the remaining ingredients. Stir well.
- Cool on high for 4 hours or low for 6-8 hours.
- Serve with fixings like sour cream, cilantro, lime juice, tortilla chips, red onions, etc.
These can be frozen for up to 3 months.
