Crockpot Taco Soup

Easy Peasy!

Ingredients:

  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 15 oz black beans, drained and rinsed
  • 15 oz kidney beans, drained and rinsed
  • 3 cups of chicken broth (if you want it to be more soup-y, do 4 cups instead)
  • 15 oz diced tomatoes (keep the juice)
  • 4 oz can chopped green chiles
  • 1 1/4 cup frozen corn kernels
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt

Directions:

  1. Pour olive oil in a sauté pan. Add ground beef and diced onions. Brown the beef and cook until the onions are soft.
  2. Add this mixture to the crockpot. Add the remaining ingredients. Stir well.
  3. Cool on high for 4 hours or low for 6-8 hours.
  4. Serve with fixings like sour cream, cilantro, lime juice, tortilla chips, red onions, etc.

These can be frozen for up to 3 months.
