Cajun Pork Tenderloin w/ Vegetables


Just got home from work? Tired but you want to make something quick, easy and yummy? Don’t fret – this here is a good recipe to use. You wouldn’t really have to list the vegetables I used in this recipe. Feel free to modify and experiment with other vegetables you may have in your kitchen.


2 teaspoons Cajun or Creole seasoning (I use Cajun)

1 pound pork tenderloin

2 medium baking or Yukon gold potatoes, peeled and chopped into cubes

4 small zucchini (sliced in chunky slices)

1 1/2 cups frozen small whole onions (from 1-pound bag)

2 tablespoons butter or margarine, melted

1/2 teaspoon dried thyme

1/4 teaspoon salt


1. Heat oven to 425 degrees. Rub Cajun seasoning into pork. Place pork in ungreased pan. Insert meat thermometer horizontally into center of thickest part of pork.

2. Arrange potatoes, zucchini and onions around pork. Drizzle butter over vegetables; sprinkle with thyme and salt.

3. Bake uncovered about 35 minutes or until thermometer reads 155 degrees. Take pan out of oven. Loosely cover pan with aluminum foil and let stand for 10 minutes. Cut pork into thin slices and serve with vegetables.
